but, it sure seems to me, Why we have to even Use them to Pick Veggies, etc.?

We invented the Cotoin Gin and many other crop Picking Machines and there aren't any for this type of work? Or is it that those kinds of machines cost More than to hire Low wage/no benefit Illegals?

I am no farmer, but it is hard to automate picking delicate fruits and vegetables because of the damage that is done to them by the machines.  You can do it with citrus fruits that have a hard skin or cotton that is not damaged by the machines, but not with tomatoes and strawberries.

The assembly plants aren't filled with illegals, many of them are union run and even the ones that aren't, aren't filled with illegals.  It is the meat packing plants, slaughterhouses that are.  Basically, the illegals are in the agri, landscaping and construction business.

I don't know how it is where you live, but where I live all the landscaping is done by illegals and no one does anything about it.  They want cheap landscaping services so they are OK with it.  I am not OK with it.  I would be OK with it if we had a regulated guest worker program and did something about anchor babies, but that may take an amendment to the constitution.
